The Secret to Authentic Karachi Chicken Biryani
Karachi biryani is celebrated worldwide for its fiery aroma, tender succulent chicken pieces, perfectly seasoned golden potatoes, and fragrant aged basmati rice. When cooking at commercial scale or for special family daawats, achieving that iconic balance requires exact poultry cutting, marination, and layered dum steaming.
The Ideal Poultry Cut: 12-Piece Biryani Cut
For Karachi biryani, whole chicken broilers (weighing 1.1kg to 1.3kg dressed) must be cut into 10 to 12 calibrated bone-in pieces. Pieces that are cut too small break apart and disappear in the rice; pieces that are too large remain raw at the bone during dum. Fresh Poultry Pakistan's calibrated 12-piece biryani cut retains its shape under high degh heat while releasing savory bone marrow into the gravy.
Commercial Ingredient Ratios (Per 1 kg Rice / 1 kg Chicken)
- Fresh Chicken: 1.0 kg to 1.2 kg (Karachi 12-piece bone-in biryani cut)
- Aged Sella or Basmati Rice: 1.0 kg (soaked for 45 minutes)
- Potatoes: 400g, peeled, halved, and parboiled with a pinch of yellow food color
- Yogurt: 250g thick whisked curd
- Tomatoes: 350g, sliced thin
- Fried Onions (Birista): 150g golden-crisped onions
- Ginger-Garlic Paste: 3 tablespoons fresh double-ground paste
- Whole Spices: Black cardamom, green cardamom, star anise, cinnamon stick, cloves, bay leaves, and mace-nutmeg (javitri-jaiphal) powder
- Aromatics: Fresh mint, green chilies, coriander leaves, kewra water, and saffron milk
Step-by-Step Degh Cooking Protocol
- The Qorma Base: In high-grade cooking oil or ghee, saute ginger-garlic paste until aromatic. Add the chicken pieces and fry over high heat for 6-8 minutes until the meat seals and turns opaque with golden edges.
- Spicing & Simmer: Stir in red chili powder, coriander, roasted cumin, crushed black pepper, dried plums (aloo bukhara), sliced tomatoes, and whisked yogurt. Cook over medium flame until tomatoes soften and oil floats on top. Add parboiled potatoes. The chicken should be 80% cooked.
- The Rice Boil: Boil 5 liters of water with whole spices and generous rock salt (the water should taste like sea water). Cook soaked rice until 70% parboiled (one firm break). Drain immediately.
- Layering & Dum: Spread the spicy chicken gravy and potatoes at the bottom of a heavy-bottomed pot. Layer the drained parboiled rice on top. Sprinkle fried onions, chopped mint, fresh coriander, green chilies, saffron-infused kewra water, and dots of pure desi ghee.
- Sealing the Steam: Seal the degh with heavy foil or dough. Cook on high heat for 5 minutes until steam builds, then reduce to lowest simmer (tava dum) for 18–20 minutes.
