The Iconic Karachi Highway Karahi

From the bustling highway dhabas of Super Highway to the food streets of Burns Road and PECHS, authentic Karachi Chicken Karahi is revered for its simplicity. Unlike northern gravies, true Karachi karahi uses no onions and no added water—its rich, clinging masala is created purely by the emulsion of rendered chicken fat, fresh ripe tomatoes, garlic water, and green chilies.

Butchery Cut: 16-Piece Karahi Cut

For karahi, a 1.0kg to 1.2kg broiler chicken is cut into 16 to 18 bite-sized bone-in pieces. The cuts include bone segments from the back and breast which provide high surface area for high-heat wok frying and rich savory fond.

Key Ingredients

  • Fresh Chicken: 1 kg (16-piece karahi cut)
  • Fresh Red Tomatoes: 600g to 700g, halved
  • Garlic Water: 1/4 cup water blended with 8 cloves of fresh garlic
  • Green Chilies: 6 to 8 fresh chilies, slit lengthwise
  • Fresh Ginger: 2-inch knob, finely cut into thin matchstick juliennes
  • Spices: Freshly crushed black pepper (essential), roasted cumin powder, red chili flakes (kutay hue lal mirch), and sea salt
  • Cooking Fat: High-smoke-point oil or pure clarified butter (desi ghee)

The High-Flame Wok Technique

  1. The Initial Searing: Heat oil in a heavy black iron karahi (wok) until shimmering. Add the chicken pieces and sea salt. Flash-fry on high flame for 5 minutes until the skin turns white-golden and juices seal inside.
  2. The Garlic Steam: Pour in the strained garlic water. Stir vigorously on high flame. The garlic water emulsifies with the sizzling oil, removing any poultry odor and imparting restaurant-grade aroma.
  3. Tomato Breakdown: Place halved tomatoes skin-side up over the chicken. Cover with a lid for 5 minutes on medium heat. Remove the lid; the tomato skins will slip off effortlessly with tongs.
  4. Bhoonai (High Heat Reduction): Turn heat to maximum. Mash the peeled tomatoes with a flat metal spatula. Fry rapidly while constantly tossing the chicken until tomato water completely evaporates and oil separates into a lustrous red glaze.
  5. Finishing Spices: Lower the flame. Add freshly cracked black pepper, roasted cumin, red chili flakes, slit green chilies, and julienned ginger. Toss for 60 seconds. Remove from heat immediately so the black pepper stays fragrant and does not darken the gravy.
