The Luxury of White Karahi
White Chicken Karahi (Safaid Karahi) is a signature Pakistani culinary innovation perfected in the upscale dining rooms of Karachi. Unlike the robust tomato-heavy red karahi, White Karahi features an opulent, mild, silky gravy enriched with hung yogurt, fresh dairy cream, cashew-almond paste, and freshly ground white peppercorns.
Why Boneless Chicken Thigh is the Secret
While some kitchens make White Karahi with bone-in chicken, executive chefs prefer boneless chicken thigh cubes (25mm). Thigh meat contains higher natural fat and collagen compared to chicken breast, meaning it remains meltingly tender and juicy even under high-heat cream reduction without drying out.
Chef's Formula
- Chicken: 800g Fresh Boneless Thigh Cubes (or 1kg bone-in karahi cut)
- Yogurt: 1 cup, whisked completely smooth (must not be sour)
- Heavy Fresh Cream: 1/2 cup dairy cream (Malai)
- Cashew & Almond Paste: 2 tablespoons blanched nuts ground with a splash of milk
- Aromatics: White pepper powder, crushed black pepper (coarse, added at the end), roasted ground cumin, coriander powder, and green chili paste (seeds removed)
