Why HACCP Matters for Chicken-Heavy Menus

Critical Control Point 3: Cooking
Chicken must reach 74°C internal temperature before it is considered safe to serve. This applies whether it is grilled, fried, or simmered in a curry, and thick cuts like whole leg quarters need extra time and a thermometer check, not just a visual "no pink" judgment.
Critical Control Point 4: Cross-Contamination
Separate boards, separate utensils, and handwashing between raw chicken and any other ingredient close this last gap. This is the point most often broken during busy service, when staff reach for the nearest knife instead of the designated one.
